Pan-fried Prawns with Sweetened Soy Butter Sauce

INGREDIENTS
1kg of prawns, peeled and de-veined
3 stalks of spring onions, white parts cut into sticks 
5 cloves of garlic, sliced
200ml of cooking oil

Sweetened Soy Sauce
1 soup spoon of SISNext Zero Calorie Sweetener
1 teaspoon of oyster sauce
1 soup spoon of light soy sauce
50g of butter
1 teaspoon dark soy sauce
METHODS
  1. To prepare the sweetened soy sauce mixture – add SISNext Zero Calorie Sweetener and 3 soup spoon of water in a sauce pot and bring to boil.

  2. Remove from the heat. Then add oyster sauce, light soy sauce and dark soy sauce and mix to combine. Set aside.

  3. Set the frying pan with enough cooking oil to shallow fry the prawns. Fry them till bright orange color then remove from hot oil and set aside.

  4. Add garlic and fry them till lightly brown. Remove from hot oil. Set aside.

  5. Discard some hot oil and leave about 1 table spoon of oil in the pan. Add spring onion and fried garlic. Fry over medium-high heat then add prawns. Toss well.

  6. Add sweetened soy sauce mixture and fry over medium-high heat till it thickens slightly. Add butter and fry till glossy. Serve immediately while hot and fragrant.
