Cranberry & Mixed Fruits Cupcakes

These delicious cupcakes are flavourful and totally satisfying. Embedded with fruits surrounded by spongy cupcake, these will stave off any hankering for sweets without the guilt of over indulgence!

INGREDIENTS

A
10 egg yolks
280g of butter
1 tablespoon of vanilla essence

B
10 egg whites
220g of SISNext Half Calorie Sugar Blend

C
280g of self-raising flour
1 tablespoon of baking powder
250g of cranberries and mixed fruits
60g of chopped almonds

METHODS
  1. Beat butter till pale. Add in egg yolks and vanilla essence. Mix well and put aside.

  2. In another bowl, whisk up Ingredients B till firm.

  3. Add in Ingredients A (butter mixture) into Ingredients B and mix well.

  4. Add in Ingredients C and mix well.

  5. Pour mixture into cupcake casings and sprinkle some of the chopped almonds on top.

  6. Bake at 180 degrees for 15-20 minutes depending on size of cupcake casings.
